I love making spaghetti because it’s simple, quick and delicious. I usually make spaghetti on Tuesday, which is my busiest day of the week. Just a little breakdown of my day:
I spend 2 hours at the gym in the morning, come home and cook a second breakfast for the hubs, shower, and then work on my ever-growing “To-Do” list. After cooking lunch, I go to my 90 minute afternoon Bikram Yoga class, then rush home to meet my mom waiting to drop off my nephew. I’m on “auntie duty” for the next 4 hours. After cooking dinner, my nephew and I have a baking session. He’s only 3, but can beat a mean egg! Whew! I don’t see how parents do it!
When every day is a Tuesday, cooking a simple meal could make all the difference. Of course I change it up, but when in doubt, spaghetti is always there to save my sanity.
{ Ingredients }
½ pound ground turkey
¼ cup onions (diced)
Spaghetti sauce
Spaghetti, angel hair or thin spaghetti pasta
½ cup mushrooms (sliced)z
¼ cup parmesan (optional)
½ teaspoon oregano
½ teaspoon paprika
Salt and pepper to taste
{ Directions }
- Add the meat and onions to a large skillet. Season with salt and pepper and cook until browned evenly.
- Add the sauce, mushrooms and seasonings to the meat. Mix well, then bring to a boil.
- Reduce heat and simmer for about 15 minutes.
- In the meantime, cook the spaghetti noodles until al dente according to the package. Drain and set aside.
- Place noodles in a large pot and add sauce. Mix well.
- If desired, top with parmesan cheese. All done. See! That was easy.
- Eat and enjoy your Tuesday.
Vegetarian Option:
Heat 1 tablespoon of olive oil in a large skillet. Add onions and sauté until lightly browned. Season with salt and pepper.
