I really dislike craving something that isn’t readily available. For example, a couple of weeks ago I had the flu and didn’t eat for 3 days. I felt awful, and since I don’t take medication, I didn’t have much relief. On day 4 I started feeling a little better and had a mini appetite. All I could think about was the apple salad I occasionally ordered from a restaurant located downtown. Mmmmmm! But I felt bad sending my hubby out to get it for me (he really wanted to get it for me). So we went to the store and gathered the ingredients to try and recreate this masterpiece. I think it was a success! Try it for yourself and tell me what you think.
| Servings: 2 small salads or 1 big salad |
{ Ingredients }
4 cups spring mix salad
1 carrot grated
½ Fuji apple sliced
¼ cup blue cheese
¼ cup candied walnuts
¼ cup Annie’s Organic Roasted Garlic Dressing
{ Directions }
- Grate the carrot with a cheese grater.
- Slice the apple into thin slices.
- Divide the salad into bowls. Add the carrots, apple, blue cheese and candied walnuts.
- Top with dressing. YAY!

Everything I’ve tried thus far has been very tasty. The food isn’t short on flavor despite your use on alternative (healthier) ingredients. Keep the flavor coming!!!
