As a child, I didn’t eat many grilled cheese sandwiches, although I vaguely recall eating a couple with that awful sliced cheese wrapped in the really thin plastic. Hmmmm. Anywhoo, as an adult, I’ve grown to love these simple yet delicious classics. I’ve tried a couple versions and this one is a little more hearty because of the mushrooms. Enjoy your adult grilled cheese!

{ Ingredients }
2 slices of bread
1 tablespoon butter or olive oil
1 tablespoon olive oil
¼ cup sliced baby bella mushrooms
¾ cup grated mozzarella or any cheese of your choice
2-3 slices of tomato (optional)
sea salt
pepper
basil (optional)
{ Directions }
- Lightly butter or brush olive oil one side of each slice of bread and set aside.
- Place 1 tablespoon of oil into a heated pan. Add the mushrooms season with salt and pepper and sauté for about 5 minutes or until softened. Remove from pan and set aside.
- Place 1 slice of the bread in a heated skillet (buttered side down). Add about 1/2 of the cheese to the bread and spread the mushrooms over the cheese. If you’re using tomatoes or basil you would add it on top of the mushrooms. Top with the remaining cheese and place the other slice of bread on top (butter side up).
- Cook for about 3 minutes on each side or to your liking.
- Remove from skillet and slice into 2 pieces. Enjoy immediately. 🙂
