Before becoming a vegetarian, I would always eat ground turkey instead of beef. Actually, I’ve never cooked beef, and haven’t eaten it in over 10 years. My hubby is not vegetarian, so I still cook yummy meat dishes for him. These tacos are quick and easy. I usually make them on my busiest days because they are so convenient. If I’m in the mood for tacos, I replace the meat with black beans. Ole’!

{ Ingredients }
Tortillas:
10 corn tortilla shells
1/8 cup of canola oil
Toppings:
2 cups of shredded lettuce
1 1/2 cups of Colby jack cheese
1/2 cup chopped tomatoes
1/4 cup of yellow onions
1/4 cup of cilantro
Turkey Meat:
6 oz of ground turkey
1 teaspoon sea salt
1/2 teaspoon pepper
2 teaspoons of garlic powder
1/8 cup of taco seasoning
1 cup of water

Shells:
- Heat oil in a small pan on medium-medium high heat. Once the oil starts to smoke slightly add your first shell. Depending on how crispy you like your shells will determine your cook time.
- Once the shell is slightly crisp fold it in half; continue to cook for about 1 minute.
- Flip and cook for another minute for a crispy shell.
- Repeat these steps for the remaining shells.
- Open the shells slightly and let them drain on a paper towel.
Turkey Meat:
- Heat a large skillet on medium heat.
- Add the turkey meat, salt, pepper, garlic powder cook until browned and fully cooked. This should take 10-15 minutes. Stir frequently.
- Add the taco seasoning and water.
- Let simmer until 1/2 the water has evaporated.
- Remove from heat and set aside.
Taco assembly:
- Assemble tacos is this order; meat, cheese, onions, tomatoes and cilantro or lettuce or both 🙂 Enjoy!
