Winner Waffles

I’ve never been a big waffle fan. I hate that they get cold so fast. Well, at least the boxed ones that I used to eat many many moons ago did. I’ve avoided waffles like the plague for this reason, but recently wanted to add something new to my breakfast repertoire, so I decided to give waffles a chance. This recipe is the base for many other options including my favorite, banana waffles. Yummy!

| Makes: 6 servings | 6-8 waffles |

{ Ingredients }

2 eggs
2 cups all-purpose flour
1 1/2 cups almond milk
1/2 cup olive or canola oil
1 tablespoon agave nectar
4 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract

{ Directions }

  1. Preheat waffle iron to your desired temperature.  Beat the eggs in a mixing bowl on high until they are light and fluffy.
  2. Mix in the flour, milk, canola oil, sugar, baking powder, salt and vanilla. Beat until fully incorporated and the batter is free of any lumps.
  3. Spray preheated waffle iron with non-stick cooking spray (unless you have a nonstick waffle iron).
  4. Pour about ½ cup of batter onto hot waffle iron. Cook until golden brown.
  5.  Lightly butter immediately.
  6. Drizzle with the syrup of your choice and enjoy!
